The story behind the recipe:
We got this recipe from Grandma Howell, who got it from Grandma Wayman's. Every Christmas we would make these Lemon Bars for Grandma Howell's Christmas cookie tray for her to give to her friends and visitors.
Ingredients:
Crust
1 cup soft margarine
Dash of Salt
1/2 cup powdered sugar
2 cups of flour
Filling:
4 beaten eggs
2 cups
1/4 cup flour
6 Tablespoon or juice of 1 lemon
Directions
Crust:
In a large mixing bowl combine all crust ingredients.
Press the mixture into a 9x13 ungreased pan.
Bake at 350 for 15 minutes.
While the crust is cooling mix the Filling.
Filling:
Combine flour and sugar mix in beaten eggs and lemon juice.
Pour into cooled crust.
Bake for 25 minutes at 350 or until set.
Sprinkle with powdered sugar
Cut into squares when cool.
